  • 200g GALLOWAY CHEDDAR, grated
  • 800g flour  
  • 1 tsp salt
  • 1 tsp cayenne
  • 920g butter
  • 150g almonds

What to do

  1. Preheat oven to 220°C/450°F/gas 8.
  2. Mix flour, salt, cayenne and cheese. Add butter and mix until mixture resembles coarse meal. Knead until smooth.
  3. Roll out dough and cut into 5 cm rounds, making approximately 16 rounds; transfer to greased baking sheet and top with almonds.
  4. Bake 10-12 minutes or until lightly browned.
